Marinated Spinach Recipe, Eat your Spinach!

Marinated Spinach
5 minute prep
serves 2-4

8 cups spinach, washed, cold water
4 cloves of garlic, minced
1-2 tsp Extra Virgin 1st cold pressed Olive Oil
5 dashes or more of Sea Salt or Herbamare Salt

Massage the spinach with fingers until it begins to wilt, allow to marinate for an hour or enjoy right away.

Healthy Harvest Treat Raw Cranberry Walnut Recipe #1

“Doughnut Holes”
Recipe by Raw Chef Chelly

Double this recipe, they won’t last long; they are just too good to
keep around!

1 3/4 cups almonds, sprouted & dehydrated
1/2 tsp sea salt
2 tbsp vanilla extract
2 cups dried cranberries
2 cups Medjool dates, pitted
1/2 cup dried chopped walnuts, sprouted &
dehydrated
1/3 cup shredded coconut
1/4 cup ground cashews or almonds

1. Process almonds, salt and vanilla into a fine powder
using a food processor.
2. Slowly add dried cranberries and dates, mix well.
Place the raw “dough” in a large bowl.
3. Mix in shredded coconut and walnuts.
4. Form raw “dough” into the size of doughnut holes.
5. Roll them in the remaining 1/4 cup of ground nuts.
Doughnut holes will keep for over a week in your fridge.

Thank you for coming to the Dehydration and Sprouting Class at The Common Market. There was a ton of information to absorb, so I hope you now have a better understanding of sprouting and dehydrating.

Due to new health department regulations I was quite limited in what I could actually do before you. Usually, there is more hands on food preparation going on. I sincerely thank you for your patience while we at The Common Market make some adjustments.

What's New with You?

I thought I would ask because I'm getting ready to tell you what is new with me.

1. My home schooled children are in school this year. Let's just say I'm dealing with this decision.
2. You can now visit www.chelly.org and be directed to all of my sites for recipes and health information.
3. I have been eating raw for 3 years, but 100% raw for 17 months now and there is no turning back. I love to eat raw.
4. Still working on my cookbook, I finally have a title, it is very cool!
5. My husband actually gained 40 lbs after introducing chicken and some cooked and processed foods into his diet after 2 years of eating 95% raw. He has now decided to go 100% raw again, but he would like to enjoy a vegan cooked Thanksgiving meal. The children and I will be eating raw. I share this personal information because my goal is to help you with your challenges, we all make choices in life, and we must deal with our own consequences. Loosing weight and preventing sickness and disease is tough, but a change in thinking and having help along the way is paramount. I have lost over 45 lbs, and 7 dress sizes. I no longer struggle with weight, fatigue, cravings, or emotional eating and I never get sick. If you do everything the way everybody else does, you will suffer the way everyone else does.
6. I am working on a new blog for Raw Food fun, I am currently doing a School Lunch Challenge. 180 days of Raw Lunches with pictures. You can feed your kids healthy and it does not take much work at all.

The Present Moment Cafe & Market, St. Augustine, Florida


This raw restaurant was fantastic! I ate dessert first! It was a delicious raw Chocolate Sundae with huge chunks of brownies and candied pecans and walnuts. I devoured it in 10-15 minutes, I drove 1 1/2 hours to reach this restaurant after a 4 hour plane ride, including a layover. I was hungry, hot, and exhausted and the Sundae hit the spot.

I also ordered a Kale salad, and a Vegetable packed Collard Wrap! Everything was so refreshing and it was a true blessing to visit this raw restaurant down south.

Being Authentic In August

Authentic Defined: based on fact, accurate, reliable, made or done in a traditional or original way; of undisputed origin; genuine.

Healthy
In order to be Healthy you must go back to the original or traditional way of eating and living. Make it simple, did you know that when eating a meal you should keep the ingredients under 5. Eating 5 or less will help to aid digestion for better absorption. Example: Eat a large green salad, but add only 4 other vegetables.

Energy
In order to have Energy throughout your day eat based on the facts. Meat, dairy, sugar, chemically treated and artificially processed foods wear your body out. The digestive system weakens and pulls resources from other vital organs, causing fatigue, mood changes and brain fog. When fasting or eating fruits and vegetables in their natural state you feel light, energetic and your mind is clear.

Crazy, Sexy, Cool
To be Crazy is easy, just don't be so serious all the time! Laugh and enjoy life even through the rough times! As we age, especially as women, we get quiet about our age. I say tell your age and add the word "Sexy"! I'm 36 and Sexy! See that sounds amazing! The word Cool comes at a price. What happens if your acting really cool, but you trip in front of a group of people? We must be able to go back to being crazy and laugh at ourselves. It's fabulous therapy.

I want to challenge you to make a decision regarding your health today. If you need help ask for it, I'm here for you. If you know what you need to do, do it and don't stand in your own way. If your family members need help, forward this Newsletter to them. We are all suffering from some ailment either large or small. I would like you to know that whatever it is, it does not have to be apart of your life forever. There is hope, but a brighter tomorrow requires a change starting today. Being Authentic requires traditional knowledge about health and wellness.

*New Recipe* Walnut Fudge Supreme

*This recipe is delicious, brought to you from my daughter.

1 cup walnuts
1 cup Medjool dates (9 dates)
1 tbsp Cacao
2 drops Vanilla Extract

Blend until oil runs from the walnuts and it resembles fudge. Smooth onto pie dish, slice into squares and freeze.

Optional: Coat fudge with ground nuts, flax, or shredded coconut.

Is Burned BBQ healthy for you?

BBQ & THE CANCER CONNECTION

I have not had any animal product off the grill in over 6 years, but the smells of summer are sweet. Who does not enjoy a BBQ and the delicious food enjoyed out doors?

I am a Raw Vegan but not the type that can not admit to how delicious the food was. Here is a question I've been pondering lately. Why do we eat cooked, warm, hot and spicy food in the summer, shouldn't we eat foods that cool, only? Of course we should! We don't however because it has been our TRADITION. We eat the food that is cooked outside instead of eating the food that grows outside in it's natural state, raw.

If you are eating your meals hot of the grill here are some health facts to consider:

-Take a High Dose of Vitamin C before eating BBQ or eat a salad with tons of lemon juice.
-Don't over cook your meats, BURNED-MARKED meat contains gene-mutating heterocyclic amines.
**Heterocyclic amines cause massive damage to your genes and have been linked to prostate, breast, colorectal, esophageal, lung, liver and other cancers.**
-A womens study in 1998 found that women who eat well cooked beef steak, hamburgers and bacon are at a 50% greater risk of Breast Cancer.
-Rare is just as dangerous, meat may contain E.coli causing hemolytic uremic syndrome (HUS) or sudden short-term kidney failure.
-Deep fried foods are just as dangerous and not the healthiest option.

REMEMBER:

DECREASE YOUR QUANTITY AND INCREASE THE QUALITY.

Summer in the Raw

TRY SUMMER IN THE RAW

Summer is just around the corner and I'd like to challenge everyone to eat more cooling foods, Fruits! Fruit cools your body, helping you stay "cool" as the temperatures begin to rise. If you experience non-life threatening allergic reactions from fruit pay close attention. Fruit cleanses your body and is trying to remove toxins. Try a fruit cleanse for 3 days or less. Drink plenty of water as well.

Summer is also a great time to practice incorporating more Dark Leafy Greens. Salads don't have to be boring. Use Romaine, Spinach, cut these small: Collards, Kale, and Chard. Fresh herbs will make your salad a hit. Try using Basil, Oregano, Cilantro, Dill and Parsley. Salads don't fill you up? Chop up a ton of vegetables like carrots, celery, olives, avocado, cucumber, tomato, radish, zucchini, squash, and grated sweet potato they are sure to fill you up. You don't like salad? Neither does my husband! Make a Salad in Disguise! A Salad in Disguise or a Salad Cover Up is a Super Healthy Salad Dressing. Store bought salad dressings contain dairy, preservatives, multiple oils, artificial sweeteners, artificial chemicals and loads of sodium. Make a simple salad dressing, pour and mix your salad in the healthy salad dressing and eat until you are full! You will taste the dressing not the salad! Now everyone will enjoy salad! My husband does! Here is a simple recipe: Equal parts Olive oil, Braggs Liquid Aminos & Apple Cider Vinegar, 1 Tbsp dried herbs.

Summer Meal Plan
Breakfast: Water, Green Drink, Fruit Bowl or check my No Bonez site for a heavier meal like Raw Oat Meal, or Oat Groats.

Lunch: Make this meal your main meal for the day. Start off with a delicious Fresh Fruit Juice, Vegetable Juice or Smoothie. Have your huge salad.

Dinner: Make a delicious Fruit Bowl and eat until satisfied! Enjoy a fresh vegetable juice or fruit juice.

5 Tips to Going Raw

1. Stock up on your favorite fruit. Eat 20 minutes before vegetable dishes.

2. Make a huge salad with your favorite chopped vegetables, don't want salad, use a different recipe from below.

3. Make a Delicious Salad dressing that can also be used as a marinade for raw vegetables.

4. Make a Delicious Raw Dessert and have it for breakfast at least once.

5. Follow steps #1-3 90% of the time and Step #4 10% of the time.

Spring Cleaning, Shopping & Nourishment

Happy Cinco de Mayo, Happy Mothers Day & Have a Blast on Memorial Day!!
Three holidays in one month!

I think celebrating our Mothers is the most important of them all. Please tell your Mom Happy Mothers Day from me. If your Mother is no longer with us remember her with the grandest grin and talk about all the wonderful times you shared. If you never knew your Mother, celebrate the people in your life that have helped to fill her place in your life.

Spring Cleaning
I want to suggest a cleanse for your body, mind and spirit. I am currently doing the Master Cleanse Click for Master Cleanse Info. Today is day 6 for me. It is a great way to cleanse the body of toxins, fat, mucus and allow healing and rest for all of your inner organs. Fasting is a great way to detox as well, just drinking water for 3 days sounds extreme but it works and you will feel great. If taking medication, this is not recommended. Juice fasting is another very effective cleansing that allows you to enjoy fresh fruit and vegetable juices. This type of cleanse allows your body to absorb nutrients and renew and rebuild cells while flushing toxins at a much slower rate than a water fast. Also, try a raw diet for 1 to 2 weeks. The raw diet allows you to help your body digest the foods, so your body gets to rest. Eating raw vegetables and fruits are loaded with fiber and many nutrients destroyed by the cooking process. Fiber cleanses, helps with absorption and fills you up. Think about doing a cleanse to rest, renew and rebuild.

Spring Shopping
After you clean your house you probably will make room for something new, right? After I complete the Master Cleanse I will focus on shopping for the highest quality fruit, vegetables, nuts, and seeds. I prefer to buy organic fresh local and in season produce. Make sure when your shopping for food that it is the best quality for your body. If you buy the cheapest patio chair it will eventually end up in the trash. The warmer temperatures make eating raw foods easy. Fruits are cooling foods, so eat your heart out!

Spring Nourishment
Here we are talking about food again! Well, we have cleansed, shopped for new food, now let's make sure we take care of our bodies by ensuring proper nourishment. We would not buy new lawn furniture and then throw it out in the street. Preparing out food properly will help our bodies to obtain all the nutrients the foods have to offer. Food preparation should be fun and exciting, not stressful and chaotic. Eating foods that are properly combined is very important. You also want to make sure that you don't over cook your vegetables, or buy poor quality meat and dairy products. 98% of sickness and disease is caused by meat, dairy products, cooked and processed food. These foods add cholesterol, hormones, antibiotics, pesticides and carcinogens (cancer agents) via protein or charring. Raw fruits and vegetables add no cholesterol, hormones, antibiotics, carcinogens or pesticides (Organic produce) to your body.

Spinach Soup & Sprouts

2 cups Spinach
1 tsp garlic
1 tsp onion
1 1/2 cup avocado
1 tsp Nama Shoyu
1/2 cup water

Blend until smooth and creamy, adjust to taste with seasonings if you want, place 1/4 cup of sprouts on top and ENJOY to the Fullest!

HAPPY EASTER EVERYONE!!!!

So, I'm on my way to Michigan, it's a 10 hour drive from New Jersey, but no Mc EE Dees (McDonalds) for me. I have put this picture up to show you how I travel. I was hungry and devoured most of the salad before I took this picture. My daughter made the salads (romaine, tomato, cucumbers, cherry tomatoes and basil-add basil to your salad, pure Heaven), she also chose sun dried tomato dressing to make. I made the sunflower seed spread it's on the cucumber slice. We also have a marinated kale salad. For breakfast of course, Green Drink, 4-50 oz bottles so we all had enough. A trip is not safe without fruit for snacks so we have apples, bananas, oranges. I have been so busy I did not have time to make chips or crackers, I must pass this duty on to the kids. Enjoy the warm weather, it's Heaven sent! God is so awesome, I'm so thankful for another long road trip with my family to visit more family! Remember this weekend for all it symbolizes, God's word is truth and it will set you free! In order to know yourself you must know who made you. If you would like to know more about Jesus - I would love to share more. He is the reason I smile! May God be Glorified in Heaven and on the Earth!

Hint of Dairy, Rich & Creamy Spaghetti Alfredo Sauce

Creamy Spaghetti Alfredo Sauce

1/8 cup Red Wine Vinegar
1/8 cup Apple Cider Vinegar
1/4 cup olive oil
3 cloves garlic, peeled
1/8 slice red onion
1 cup sundried tomatoes
2 small vine ripened or plum tomatoes
1 cup fresh basil
1/2 tsp Pink Himalayan salt

Blend on high till smooth, may leave a little chunky. Just made this tonight with daikon, carrot and zucchini noodles. This sauce taste like it has some kind of dairy (hence, "alfredo" in the title), sour cream maybe, don't know. You can use less Apple Cider Vinegar and add 1/4 cup red wine vinegar or do a mixture of balsamic vinegar and red wind vinegar. My motto is use what ever you have available. Enjoy!

I had the pleasure of serving a wonderful group of women last week. The very successful raw food prep classes were a hit, the food was delicious, mouth watering, fresh and very filling!

From raw soups to raw and living sauces, dips and spreads the classes were exciting and I am very pleased!!

Morning Glory Oat Groats by Chelly





Morning Glory Oat Groats







It looks like cooked oatmeal, but taste better and is more filling than its cooked counterpart.

Prepare the night before:
Soak in filtered water 1 cup Oat Groats

In the Morning:
Rinse the Oat Groats in strainer
Add all ingredients by rotation:
3-4 dates, pitted or,
1 cup raisins, Flame Raisins are my favorite (can add both dates and raisins)
1-2 tsp cinnamon
1/2 tsp nutmeg
1-2 tsp vanilla

Add some dates and raisins, then add some Oat Groats and spices and then repeat. Blend in Vita Mix until Oat Groats have been ground, using your variable speed dial and the tamper, don't go to high speed. Be careful not to grind too long, it will become dough. Enjoy!

Chantilly, VA Costco Vita Mix Show

Howdy Virginians!! Your favorite Vita Mix demonstrator will take over Costco with the message of health! Stop by the Vita Mix booth! January 15-19, 2010.

Common Market Frederick, MD Saturdays Class!!!

Saturdays Class was such a blast!! Thank you to all who traveled from outside of the Frederick area! Thank you to Zoe for her professionalism and help! Thank you to all those who keep coming out!!! We celebrated the New Year with some delicious party foods that can be served in raw wraps, enjoyed with raw chips or added to a regular old salad.

I choked everyone in class simultaneously without laying a hand on anyone..............What a gracious host I was.

I have a Hot "Holapeno" opps, Jalapeno story for you.

It all began when I sliced and cored 5 Jalapenos with my bare hands. These were level 5 Jalapenos because it took about an hour and both hands were on fire for 48 hours. That means, anytime I ate, I burned my lips and tongue if I put my fingers to my mouth. I burned my eyes when putting in my contacts (I've got to switch to glasses, healthier) . I burned my childrens mouth, they licked my fingers too, they had to try it :). The back of my hands felt like I poured boiling water right on them after class. So, if after class you stopped to talk to me, guess what?!?, my hands were on FIRE!

Oh yes, and if you are wondering how I managed to choke the class, without touching anyone. Well, that my dear is a Jalapeno story as well. Oh and yes, I choked myself as well.

I decided to show everyone how to chop Jalapenos in the Vita Mix, I did not have to do that, I knew what would happen to me at least. I could have just chopped them by hand, preventing the agony. I may have made a few enemies. I chopped 5 Jalapenos in the Vita Mix and the Raw Natural Fumes choked the whole class at the same time for quite a while.

I am extremely sorry for making everyone choke. Try choking and presenting a raw food class! I also thought that would be a great ice breaker at a party, make everyone choke and laugh at the same time. You will definitely get your party started! Just tell everyone to move in close and then take the top of the Vita Mix and let the Jalapeno go!!! I'm sorry, I thought that was funny.

It is better than choking from cigarette smoke and laughing because you are intoxicated. :)
