DANDELION ROOT COFFEE: BETTER THAN TEA & COFFEE

DANDELIONS ARE GREAT FOR STABILIZING YOUR BLOOD SUGAR AND EVEN REVERSING DIABETES AND LIVER DISEASE.  THEY ARE ALSO BENEFICIAL FOR WEIGHT LOSS.

BENEFITS OF DANDELIONS


Dandelion Root Coffee
The roasted roots are largely used to form Dandelion Coffee, being first thoroughly cleaned, then dried by artificial heat, and slightly roasted till they are the tint of coffee, when they are ground ready for use. The roots are taken up in the autumn, being then most fitted for this purpose. The prepared powder is said to be almost indistinguishable from real coffee, and is claimed to be an improvement to inferior coffee, which is often an adulterated product. Of late years, Dandelion Coffee has come more into use in this country, being obtainable at most vegetarian restaurants and stores. Formerly it used occasionally to be given for medicinal purposes, generally mixed with true coffee to give it a better flavor. The ground root was sometimes mixed with chocolate for a similar purpose. Dandelion Coffee is a natural beverage without any of the injurious effects that ordinary tea and coffee have on the nerves and digestive organs. It exercises a stimulating influence over the whole system, helping the liver and kidneys to do their work and keeping the bowels in a healthy condition, so that it offers great advantages to dyspeptics and does not cause wakefulness. 

If you want a hot beverage simply make dandelion coffee. Dandelion coffee is made from the root of the plant. Gather your roots in the fall or in the early spring before the plant blooms. Scrub the unpeeled roots with a stiff brush. Use the big part of the root for a vegetable. It's the skinny side roots that you need to dry, grind, and roast for you brew. Simply dry the roots in an oven (150 degrees) until they are brittle and snap easily. Then roast them at about 375 degrees for 15-20 minutes or until they are dark brown inside. Now grind them in the blender until they look like coffee. For a steaming cup of dandelion coffee use about one teaspoon of ground root to a cup of boiling water. This brew will have a flavor all it’s own, vaguely chocolaty and pleasing.

Yummy Dessert Recipe

Delicious Cashew Cream

3 cups cashews
2-3 cups coconut water
1-2 tbsp Vanilla extract
pinch of sea salt

Blend in Vitamix until smooth.  Enjoy with fruit as a dip, make a parfait as pictured or freeze for a delicious ice cream.

Daisy made hummus out of chickpeas that we soaked and put a dallop on carrot slices and kale pieces.  She is so creative when she is wearing her raw chef hat!  Happy Birthday little lady, I am so proud of you!  Daisy loves to dance, play the violin, do her hair, hang out with friends, play with her brother and cousins, she is a foodie and very compassionate and caring.

Fabulous Dessert Recipes

Macaroons

3 c coconut, shredded
1 1/2 cup cacao or carob powder
1 cup Honey (not vegan), Yukon, Date or Maple Syrup (not raw)
1/3 cup coconut butter
2 T vanilla or vanilla bean powder
1/2 t sea salt

Mix ingredients well, dehydrate until dry or freeze until firm.





Chocolate Almond Butter Cups


1 cup of Cacao or Carob
1 cup of Honey (not vegan), Yukon, Date or Maple Syrup (not raw)
1/4 cup Coconut Oil
pinch of sea salt


Blend in Vitamix until smooth and velvety.


To make cups:
Spread Almond butter on parchment paper in a pie dish or on a cookie sheet.  Place chocolate on top and freeze or place Almond butter in paper cups and chocolate on top and freeze.  Enjoy!


Cheesecake

For a larger serving use
3 cups cashews
3-6 lemons depending on size
1/4 cup coconut butter
1 cup sweetener

Place crust in pie dish and spread cheeze evenly and freeze until firm and enjoy.  I keep it in the freezer it will keep for a week.

COLD HARD DAIRY MYTHS DECONSTRUCTED:

1. MILK BUILDS STRONG BONES - DRINKING MILK FROM OTHER ANIMALS THROWS OFF YOUR BODIES ACID ALKALINE BALANCE, MILK IS ACIDIC AND IN ORDER TO REGAIN THE PROPER CALCIUM/PHOSPHORUS BALANCE CALCIUM IS LEACHED FROM YOUR BONES.  THE COUNTRIES WHERE THE MOST DAIRY IS CONSUMED HAS THE HIGHEST RATE OF HIP FRACTURES.

2. VITAMINS AND MINERALS ARE NOT DESTROYED DURING PASTEURIZATION- NOT ONLY ARE VITAMINS AND MINERALS DESTROYED, THE BACTERIAS, VIRUSES AND TOXINS ARE NOT COMPLETELY DESTROYED EITHER.

Goal:
1. Know where to find & eliminate Dairy!!
2. Learn to make your own Healthy Substitutions!!!

Dairy is hidden in the Three States of Matter:

1. Solid-cheese, crackers, bread, butter, cereal, chips, noodles, spreads, batters, snack bars, puddings, all desserts, all prepared foods
2. Liquid-Milk, coffee drinks, smoothies, yogurts, baby formulas, tea
3. Gas- your gas, your family members, your animals, "geez-o-peeks", say excuse me somebody! Dairy must be eliminated!

Now, where do you get your milk and cheese from? Keep reading.....

Here are some healthy substitutions:
1. Make nut or seed based "mylks."
2. Nut allergy? Try guacamole for cheese or sour cream.
3. Try nut based "cheeze."
4. Make nut or seed based yogurts.
5. Make nut based sweet or savory creams, spreads or sauces.

One of the first things I help my clients to learn to do is substitute unhealthy options with healthy ones.

DELICIOUS RECIPE

PARMESAN "CHEEZE"

1 CUP BRAZIL NUTS
1/4 TSP SEA SALT

PROCESS IN FOOD PROCESSOR UNTIL CRUMBLY AND SPRINKLE OVER YOUR SALADS, PASTA DISHES AND SANDWICHES.

*BRAZIL NUTS ARE HIGH IN SELENIUM, EAT 3 PER DAY.  SELENIUM INCREASES THYROID HORMONE METABOLISM, REDUCES THE RISK OF HEART DISEASE, INFERTILITY AND CANCER.

HAPPY MEMORIAL DAY!!!!

LEMON AIDE

3 CUPS RED GRAPES
2 INCHES GINGER
1/2 LEMON WITH PEEL
1/2 CUP HONEY
2 CUPS ICE

BLEND IN VITAMIX AND ENJOY!!!!

COLESLAW

1 JICAMA, CUBED
1 RED ONION, DICED
1 CUP CELERY, CHOPPED
1 CUP GREEN BELL PEPPER, CHOPPED

SAUCE:
1/2-1 CUP WATER OR COCONUT WATER, AS NEEDED
2 CUPS WHITE NUTS
1/2 CUP ORGANIC STONE GROUND MUSTARD
1 TSP SEA SALT
1/2 TSP BLACK PEPPER
1/4 LEMON JUICE
GARNISH WITH PAPRIKA

CHOP VEGETABLES, POUR SAUCE OVER AND ENJOY!


MEATBALLS

2 CUPS WALNUTS
1 LARGE PORTABELLA MUSHROOM
1/4 ONION
1 TBSP ONION POWDER
2 TBSP FENNEL SEEDS
1 TSP SEA SALT
2 TBSP COCONUT AMINOS, BRAGG OR NAMA SHOYU OR MISO
*OPTIONAL CAN ADD MORE SEA SALT IF NEEDED

PROCESS IN FOOD PROCESSOR UNTIL MEAT TEXTURE, FORM INTO BALLS, DEHYDRATE UNTIL READY TO EAT AND ADD YOUR SAUCE WHEN SERVING.

SAUCE:
1 CUP SUNDRIED TOMATOES
1 LEMON JUICES OR 2 TBSP APPLE CIDER VINEGAR
1-2 DATES

BLEND IN VITAMIX UNTIL SMOOTH OR A TAD CHUNKY.  ENJOY!

A Raw Beegan Defined.......

I consider myself a raw beegan (honey) this means that over the last 5 years now I've consumed 95% raw fruits, nuts, seeds, vegetables, legumes, sprouted grains and grasses.

5% of my diet would include some nuts that are not raw and unprocessed, some maple syrup rarely, condiments like Tamari, Olive Oil, honey, Nutritional Yeast, Olives and Agave.

I have totally enjoyed and prospered on the raw beegan diet. My skin is radiant, my size is perfect, my energy surpasses my teenagers and I feel simple amazing every day!

Simply warming vegetables for two minutes is a great way to eat your vegetables as close to raw as possible.
