Fabulous Dessert Recipes


3 c coconut, shredded
1 1/2 cup cacao or carob powder
1 cup Honey (not vegan), Yukon, Date or Maple Syrup (not raw)
1/3 cup coconut butter
2 T vanilla or vanilla bean powder
1/2 t sea salt

Mix ingredients well, dehydrate until dry or freeze until firm.

Chocolate Almond Butter Cups

1 cup of Cacao or Carob
1 cup of Honey (not vegan), Yukon, Date or Maple Syrup (not raw)
1/4 cup Coconut Oil
pinch of sea salt

Blend in Vitamix until smooth and velvety.

To make cups:
Spread Almond butter on parchment paper in a pie dish or on a cookie sheet.  Place chocolate on top and freeze or place Almond butter in paper cups and chocolate on top and freeze.  Enjoy!

For a larger serving use
3 cups cashews
3-6 lemons depending on size
1/4 cup coconut butter
1 cup sweetener

Place crust in pie dish and spread cheeze evenly and freeze until firm and enjoy.  I keep it in the freezer it will keep for a week.
