Marinated Spinach Recipe, Eat your Spinach!

Marinated Spinach
5 minute prep
serves 2-4

8 cups spinach, washed, cold water
4 cloves of garlic, minced
1-2 tsp Extra Virgin 1st cold pressed Olive Oil
5 dashes or more of Sea Salt or Herbamare Salt

Massage the spinach with fingers until it begins to wilt, allow to marinate for an hour or enjoy right away.

Healthy Harvest Treat Raw Cranberry Walnut Recipe #1

“Doughnut Holes”
Recipe by Raw Chef Chelly

Double this recipe, they won’t last long; they are just too good to
keep around!

1 3/4 cups almonds, sprouted & dehydrated
1/2 tsp sea salt
2 tbsp vanilla extract
2 cups dried cranberries
2 cups Medjool dates, pitted
1/2 cup dried chopped walnuts, sprouted &
dehydrated
1/3 cup shredded coconut
1/4 cup ground cashews or almonds

1. Process almonds, salt and vanilla into a fine powder
using a food processor.
2. Slowly add dried cranberries and dates, mix well.
Place the raw “dough” in a large bowl.
3. Mix in shredded coconut and walnuts.
4. Form raw “dough” into the size of doughnut holes.
5. Roll them in the remaining 1/4 cup of ground nuts.
Doughnut holes will keep for over a week in your fridge.

Common Market, Frederick, MD Raw Food Class

Thank you for coming to the Dehydration and Sprouting Class at The Common Market. There was a ton of information to absorb, so I hope you now have a better understanding of sprouting and dehydrating.

Due to new health department regulations I was quite limited in what I could actually do before you. Usually, there is more hands on food preparation going on. I sincerely thank you for your patience while we at The Common Market make some adjustments.

There will be no October 2010 Raw Candy class this year. Due to my hectic October schedule. So, I have given you a recipe to try, it's in The Common Market Newsletter. Enjoy the recipe!

What's New with You?

I thought I would ask because I'm getting ready to tell you what is new with me.

1. My home schooled children are in school this year. Let's just say I'm dealing with this decision.
2. You can now visit www.chelly.org and be directed to all of my sites for recipes and health information.
3. I have been eating raw for 3 years, but 100% raw for 17 months now and there is no turning back. I love to eat raw.
4. Still working on my cookbook, I finally have a title, it is very cool!
5. My husband actually gained 40 lbs after introducing chicken and some cooked and processed foods into his diet after 2 years of eating 95% raw. He has now decided to go 100% raw again, but he would like to enjoy a vegan cooked Thanksgiving meal. The children and I will be eating raw. I share this personal information because my goal is to help you with your challenges, we all make choices in life, and we must deal with our own consequences. Loosing weight and preventing sickness and disease is tough, but a change in thinking and having help along the way is paramount. I have lost over 45 lbs, and 7 dress sizes. I no longer struggle with weight, fatigue, cravings, or emotional eating and I never get sick. If you do everything the way everybody else does, you will suffer the way everyone else does.
6. I am working on a new blog for Raw Food fun, I am currently doing a School Lunch Challenge. 180 days of Raw Lunches with pictures. You can feed your kids healthy and it does not take much work at all.

The Present Moment Cafe & Market, St. Augustine, Florida


This raw restaurant was fantastic! I ate dessert first! It was a delicious raw Chocolate Sundae with huge chunks of brownies and candied pecans and walnuts. I devoured it in 10-15 minutes, I drove 1 1/2 hours to reach this restaurant after a 4 hour plane ride, including a layover. I was hungry, hot, and exhausted and the Sundae hit the spot.

I also ordered a Kale salad, and a Vegetable packed Collard Wrap! Everything was so refreshing and it was a true blessing to visit this raw restaurant down south.

Being Authentic In August

Authentic Defined: based on fact, accurate, reliable, made or done in a traditional or original way; of undisputed origin; genuine.

Healthy
In order to be Healthy you must go back to the original or traditional way of eating and living. Make it simple, did you know that when eating a meal you should keep the ingredients under 5. Eating 5 or less will help to aid digestion for better absorption. Example: Eat a large green salad, but add only 4 other vegetables.

Energy
In order to have Energy throughout your day eat based on the facts. Meat, dairy, sugar, chemically treated and artificially processed foods wear your body out. The digestive system weakens and pulls resources from other vital organs, causing fatigue, mood changes and brain fog. When fasting or eating fruits and vegetables in their natural state you feel light, energetic and your mind is clear.

Crazy, Sexy, Cool
To be Crazy is easy, just don't be so serious all the time! Laugh and enjoy life even through the rough times! As we age, especially as women, we get quiet about our age. I say tell your age and add the word "Sexy"! I'm 36 and Sexy! See that sounds amazing! The word Cool comes at a price. What happens if your acting really cool, but you trip in front of a group of people? We must be able to go back to being crazy and laugh at ourselves. It's fabulous therapy.

I want to challenge you to make a decision regarding your health today. If you need help ask for it, I'm here for you. If you know what you need to do, do it and don't stand in your own way. If your family members need help, forward this Newsletter to them. We are all suffering from some ailment either large or small. I would like you to know that whatever it is, it does not have to be apart of your life forever. There is hope, but a brighter tomorrow requires a change starting today. Being Authentic requires traditional knowledge about health and wellness.
