Thanksgiving Meal Whole Foods Edgewater, NJ

Thank you to the New Jersey Gals that came out on Wednesday night, we had a ball, the food was delicious, it was my pleasure to serve you!

Thanksgiving meal time can be delicious, nutritious and overwhelmingly satisfying. I have had the honor of serving over 30 people a raw Thanksgiving Meal and I must say everyone was pleasantly surprised, from Maryland to New Jersey. My guests ate things they have never eaten raw, like sweet potatoes, enjoyed foods they don't like cooked, like Raw Kale, and who knew you could make a savory stuffing that does not go in the oven.  The classes also enjoyed an Apple Pie made in 10-15 minutes that taste better than the cooked version.

I think I have managed to convince a few people that eating a raw diet is totally satisfying and surprisingly easy! I have posted my Living Raw Vegan Thanksgiving Recipes down below in the recipe section. Enjoy them with your families this Holiday Season and don't miss my December class for great Christmas Recipes at The Common Market in Frederick, MD.

Feeling a bit overwhelmed with the desire to eat healthy, but Thanksgiving is here?

Have a Plan for the Parade!  Here goes:

1. Drink lots of water 2 hours before meal time, 32-48 oz.
2. Make a plate, then take half the food off and wrap it for the next day.
3. Share one piece of desert with someone else or do number 2. (Not that #2)
4. Bring your own healthy meal, prepare enough to last the rest of the week, (your healthy leftovers) and bring a healthy desert to share.
5. Traveling? Find a healthy market and prepare something great from my Thanksgiving Recipes, even one dish can be a satisfying meal.
a.  Please share why you are eating differently and the benefits or changes that you have noticed, and share my website with everyone :).
6.  Travel with your Vita Mix, you must not leave home without it, make green drinks daily, as if your life depended on it!
7.  Going home for the holidays often causes emotional cravings for comfort food!  Be on alert, ask yourself three questions before you indulge. 
1. Why am I having this craving? (Healthy or Emotional Craving)
  2. How will I feel after I eat this, is their a healthy substitute?
3.  Am I doing the greatest good to my body or do I care at the moment?

The decision is yours.........................

Thanksgiving Recipes 2009

Cranberry Relish by Chef Chelly

1 12 oz. bag Cranberries

1 orange, whole or remove peel to add less sweetner

Orangic Raw Honey to taste, or dates

Blend lightly in Vita Mix until chunky


Turkey Loaf by Alissa Cohen

1 cup cashews

1 cup pumpkin seeds

1/2 cup brazil nuts

5 stalks of celery

1 scallion

1 tsp sage

Process in Food Processor until well blended and mixed, form into loaf and spread Cranberry Sauce on top.


Sweet Potato Souffle Ingredients by Chef Chelly

4 large yams or sweet potatoes (Garnet or Jewel)

3 Tablespoons fresh lemon juice

1 cup water, more or less as needed

1/2 cup cashews

1/2 cup pine nuts

2 teaspoons vanilla extract

15 pitted medjool dates

1 Tablespoon ground cinnamon

1/4 teaspoon fresh grated nutmeg

Peel potato, slice into cubes, place all ingredients in high power blender until smooth.


Wilted Greens Ingredients by Chef Chelly

35-30 large, hardy, dark green leaves

1-2 teaspoons sea salt or Herbamare

1-2 Tablespoons fresh lemon juice

2 Tablespoons extra-virgin olive oil

Lay greens on top of each other roll like a cigar and thinly slice, sprinkle with salt, let sit 10 minutes, then add other ingredients and massage (rub greens with hands) into greens, serve.


Savory Stuffing by Matt Amsden

1 cup soaked raw walnuts

1 cup soaked raw pumpkin seeds

1 cup soaked raw sunflower seeds

1/3 cup yellow onion

3/4 cup diced celery

1 cups chopped mushrooms

2-3 T Nama Shoyu

2 T Olive Oil

1/4 t sea salt

1/2 t black pepper

1 1/2 t kelp

1 1/2 t sage

1 1/2 t thyme

Process in FP until chunky and well mixed.


Apple Pie by Chef Chelly

Crust

2 cups walnuts, soaked

5 dates

Process in FP until crumbly, form into pie shell shape.


Pie

2 apples, quartered

1/2 lemon juiced

Process in FP until chunky, place on pie crust.


Pie Topping

2 apples

1 cup flame raisins

1/2 lemon juiced

1 banana

2 tsp cinnamon

Blend until smooth in Food Processor. Spread on top of pie

Happy November 2009!

Hello Everyone,

I had a Raw Dessert Tasting at a fabulous little health store in Ramsey, NJ called Organico. The tasting went very well, I sampled Living Raw Vegan Chocolate Pudding, Cheesecake, Brownies and Key Lime Pie. The customers loved them! The deserts sold in the store for a week. The Cinnamon Rolls, Key Lime Pie and Apple Cobblers all sold out! The selection also included Strawberry Shortcakes. That was fun and I will have more!

I have great classes coming up in November in Frederick, MD and also New Jersey, please check my schedule for dates and time.
